Corn is the prom queen of the summer garden, popular and sweet and reigning benevolently over her court, comprised of tomatoes and peaches (or nectarines). They’re like the popular kids in school, only nicer and far more adaptable.

I’ll almost always choose corn this time of year; it rarely misses and often delivers unforgettable dishes whether hot or cold, cooked or almost-raw. I first developed a recipe in this family of casserole/pudding/bake (kugel?) with Chrissy Teigen for a Thanksgiving menu she did for her Website, Cravings, and then an adaptation that went into her second book.
