My dear friend Mike Solomonov’s newest restaurant, Aviv, officially opened in the 1 Hotel South Beach this weekend. The buzz has been building for months, and last month, we broke in the kitchen at Aviv as I had the honor of participating in a preview Shabbat dinner with Mike and chef Stephanie Izard at the South Beach Wine and Food Festival. The room was packed, the vibes impeccable, the optimism and promise of a new restaurant infused in every bite. The next day I sat down with Mike for a conversation about the restaurant, what it’s like opening a new project right now, the dialectic of Jewish and Israeli life, and why Jewish inclusivity is more important than ever.
